CASCADE - Released in 1972 from OSU (Corvallis, OR) breeding program as a new variety. Characterized by a medium strength aroma, with a low bittering value, alpha 4-7%.


CHINOOK - Released by the US (OSU Corvallis, OR.) High Alpha Breeding Program in 1985. Has a good quality earthy aroma, alpha 11-13%.


CLUSTER - 7.1% alpha acid content. Primarily used as a bittering hop, but can give a nice black currant aroma and flavor. Used in light and dark American lagers



FUGGLE - 4.0% . Woody, earthy and slightly fruity, very popular with homebrewers because of its versatility. Used in pale ales, porters, and stouts.

GLACIER - 5.9% Leaf Hops. An excellent new variety with balanced bittering properties combined with a good aroma profile. Good for use in Pale Ales, ESBs, Bitters, Porters, and Stouts. A Willamette substitute.

HORIZON - 10.9% Alpha Acid Content. This hop has a pungent, powerful aroma of resins/candy and citrus with some peppery notes. Has bittering qualities that are very smooth. Becoming increasingly popular. Used in Ales, Bitters, Pale Ales, Porters and Stouts.

MT. HOOD - Hallertauer hybrid released in 1989 as a disease resistant variety, Aroma is mild and clean, with an alpha an 4-5%.



NORTHERN BREWER - This is an English bred variety with some aroma but a high bittering quality, alpha 7-9%. It is difficult to grow.

NEWPORT - Typical alpha: 12.0-14.0%. Super-high alpha hop with an earthy, slightly resinous aroma—sometimes described as "new mown hay" .


NUGGET - 12.5% Floral, resiny, candy-like aroma/flavor. Used primarily as a bittering hop and provides a very smooth bitterness. Used in Medium to Dark American ales and lagers.

STERLING - Saaz Hybrid, suitable for replacing Saaz hops in brewery blends. Much higher yield potential than Saaz hops. aroma and oil composition very similar to Saaz. Alpha Acid 6-9% . Very good yield.

WILLAMETTE - Released by the USDA in 1976 as a new aroma variety. A triploid hybrid of English Fuggle, characterized by low bittering values.. a mild aroma. Medium yields. alpha 4-6%.

Hop Characteristics
Hops are harvested cone shaped flowers of hop vines. These cones contain lupulin glands, which are responsible for bitterness and aroma qualities. Bittering hops usually have a high alpha acid. The bitterness qualities that hops add are from the alpha acids in the lupulins. When boiled, a reaction occurs that creates bitterness and adds a natural preservative to the beer. First noted when India Pale Ale was sent from England to their troupes in India. These ales were strongly bittered so it would remain fresh when it arrived by ship. Aroma hops are noted for their lower alpha acid contents and their fragrance. When added towards the end of the boiling process, these hops produce different levels of hoppy, piney, woody and fruity aromas.

Whole Flower Hops are similar to plugs in their use. Hop Flowers are noted for their hop bouquet and are often used in special recipes. All hops are kept refrigerated until the time they are shipped to guarantee maximum freshness.

Hops are whole dried leaf. All hops sold by Jordan Family Farms come in foil bags that provide both oxygen and light barrier for up to one year or more. To assure freshness we have flushed the bag with nitrogen to help displace any residual oxygen that may be present.  All hops are kept refrigerated from the day they are dried until the time they are shipped to guarantee maximum freshness.
